The event, which is being organized in collaboration with California Wine Institute, The Napa Valley Vintners, and Sonoma Valley Vintners, will allow attendees to learn more on the wine industry in Cuba.
Wine is an important part of the culture in Cuba. But with limitations in trade with other countries, access to American wines has been limited across the country. With the warming relations with the United States, and with trade talks opening between the two countries, there is now an opportunity for Californian wines to be sent to Cuba for the locals to enjoy. This has led to the inaugural California Wine Symposium to take place in Havana, Cuba in 2016.
At the California Wine Symposium, attendees will have the opportunity to learn more on doing business in Cuba. They will learn about local wine products as well as the local marketplace. The event, which is the 35th annual Wine Classic, will bring together winery owners from across California. Serves 4
Dry Rub
Thoroughly mix all dry rub ingredients in a bowl and set aside. Place the loin in a deep baking dish and pour oil over the meat. Thoroughly coat and add the dry rub. Massage dry rub into the loin ensuring complete coverage. Set aside for 6 hours in refrigerator.
Remove the loin to rest at room temperature 30 minutes before grilling.
Open the bottle of Sangiovese and pour yourself a glass! Sear each side of the loin on the grill and reduce the heat. Cook until the internal temperature reaches 145 °F, remove from the grill and cover with foil to rest.
In the interim, grill the pineapple slices until thoroughly hot.
Steam the string beans until desired tenderness.
Thinly slice the tenderloin and serve with 2 slices of pineapple, string beans and the remaining glasses of Saddleback Cellars Sangiovese!
