1997 Cabernet Sauvignon

Cabernet Sauvignon
Just when you think you've had the biggest wine ever, Nils comes out with something even larger. Pampered and cradled from inception , this blockbuster wine comes from a great and bountiful vintage. The color is the blackest of blackberry, and both the nose and the mouthfeel are hellaciously delectable! The nose is dominated by briery fruit: blackberry, loganberry, and boysenberry. The taste, well ... beneath the fullness, we find the smoky wood is delicate, not overpowering, and the rich chocolate is dark, not milky. Black pepper and coffee bean elevate this distinct wine to an opulent level. The tannins are subtle, but the structure is solid. This wine will be best enjoyed in two to three years, but you may decide to lay it down for many years to come!

Ratings

Needless to say, this is the first of many terrific 1997 Cab's produced by Nils. Exotic blackberry and spice aromas open on the palate where fruit and oak explode from one end to the other. juicy, jammy, and velvet soft with well integrated layers of fruit and oak. Round, lush and expansive, this should continue to improve over the next 10 or 15 years, but it is also enjoyable now. As always, try this beauty with lamb, beef, or venison.
